- whole wheat flour - 1 cup
- water - 1/4 cup
- oil - 2 tablespoons (for dough)
- salt - 1/2 teaspoon
- oil - for deep frying
- potato - 1 medium, boiled and mashed
- green peas - 1/2 cup, boiled
- carrot - 1 small, grated
- cumin seeds - 1/2 teaspoon
- coriander powder - 1 teaspoon
- garam masala - 1/2 teaspoon
- red chili powder - 1/4 teaspoon
- salt - 1/2 teaspoon (for filling)
- fresh cilantro - 2 tablespoons, chopped
- lemon juice - 1 teaspoon
Steps
- In a mixing bowl, combine whole wheat flour, 2 tablespoons of oil, and 1/2 teaspoon of salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
- In another bowl, mix the mashed potato, boiled green peas, grated carrot, cumin seeds, coriander powder, garam masala, red chili powder, and 1/2 teaspoon of salt. Add chopped cilantro and lemon juice, and mix well to combine.
- Divide the dough into 6 equal portions and roll each portion into a ball. Flatten each ball into a small disc.
- Place a spoonful of the vegetable filling in the center of each disc. Carefully fold the edges over the filling and pinch to seal, forming a ball again.
- Heat oil in a deep frying pan over medium heat. Once hot, carefully add the kachoris, a few at a time, and fry until golden brown and crispy, about 4-5 minutes, turning occasionally.
- Remove the kachoris with a slotted spoon and drain on paper towels. Serve hot with chutney or sauce of your choice.
