Ingredients

  • whole wheat flour - 1 cup
  • water - 1/4 cup
  • oil - 2 tablespoons (for dough)
  • salt - 1/2 teaspoon
  • oil - for deep frying
  • potato - 1 medium, boiled and mashed
  • green peas - 1/2 cup, boiled
  • carrot - 1 small, grated
  • cumin seeds - 1/2 teaspoon
  • coriander powder - 1 teaspoon
  • garam masala - 1/2 teaspoon
  • red chili powder - 1/4 teaspoon
  • salt - 1/2 teaspoon (for filling)
  • fresh cilantro - 2 tablespoons, chopped
  • lemon juice - 1 teaspoon

Steps

  1. In a mixing bowl, combine whole wheat flour, 2 tablespoons of oil, and 1/2 teaspoon of salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
  2. In another bowl, mix the mashed potato, boiled green peas, grated carrot, cumin seeds, coriander powder, garam masala, red chili powder, and 1/2 teaspoon of salt. Add chopped cilantro and lemon juice, and mix well to combine.
  3. Divide the dough into 6 equal portions and roll each portion into a ball. Flatten each ball into a small disc.
  4. Place a spoonful of the vegetable filling in the center of each disc. Carefully fold the edges over the filling and pinch to seal, forming a ball again.
  5. Heat oil in a deep frying pan over medium heat. Once hot, carefully add the kachoris, a few at a time, and fry until golden brown and crispy, about 4-5 minutes, turning occasionally.
  6. Remove the kachoris with a slotted spoon and drain on paper towels. Serve hot with chutney or sauce of your choice.
