  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (coconut or vegetable oil)
  • Fresh coriander - a handful, chopped (for garnish)

Steps

  1. Heat the oil in a large pan or wok over medium heat.
  2. Add cumin seeds and let them splutter before adding sliced onions. Sauté until golden brown.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
  4. Add diced bell pepper, carrot, zucchini, and green beans to the pan. Sauté for about 5-7 minutes until the vegetables start to soften.
  5. Stir in chopped tomato, turmeric powder, coriander powder, and salt. Cook for another 5 minutes until the tomatoes soften and combine with the veggies.
  6. Add garam masala and mix well. Cook for an additional 2-3 minutes to allow flavors to meld.
  7. Remove from heat and garnish with chopped fresh coriander. Serve hot with rice or naan.
