- Onion - 1 medium, sliced
- Tomato - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons (coconut or vegetable oil)
- Fresh coriander - a handful, chopped (for garnish)
Steps
- Heat the oil in a large pan or wok over medium heat.
- Add cumin seeds and let them splutter before adding sliced onions. Sauté until golden brown.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add diced bell pepper, carrot, zucchini, and green beans to the pan. Sauté for about 5-7 minutes until the vegetables start to soften.
- Stir in chopped tomato, turmeric powder, coriander powder, and salt. Cook for another 5 minutes until the tomatoes soften and combine with the veggies.
- Add garam masala and mix well. Cook for an additional 2-3 minutes to allow flavors to meld.
- Remove from heat and garnish with chopped fresh coriander. Serve hot with rice or naan.
