- Chickpea flour (besan) - 100 grams
- Yogurt (plant-based) - 50 grams
- Water - 100 ml
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Grated ginger - 1 teaspoon
- Chopped green chili - 1/2 teaspoon
- Carrot (grated) - 30 grams
- Spinach (finely chopped) - 30 grams
- Coriander leaves (chopped) - 1 tablespoon
- Oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Sesame seeds - 1 tablespoon
Steps
- In a mixing bowl, combine chickpea flour, yogurt, water, turmeric powder, salt, grated ginger, and chopped green chili to form a smooth batter.
- Add in the grated carrot, chopped spinach, and coriander leaves. Mix well and let it rest for 15 minutes to ferment slightly.
- After resting, add baking soda and lemon juice to the batter, mixing gently until combined.
- Grease a steaming tray or a cake pan with a little oil.
- Pour the batter into the prepared tray, spreading it evenly.
- In a steamer, bring water to a boil and place the tray inside, covering it with a lid. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
- While the dhokla is steaming, heat oil in a small pan, add mustard seeds, and let them splutter. Once done, add sesame seeds and sauté for a few seconds.
- Once the dhokla is cooked, remove it from the steamer and pour the tempered mustard and sesame seed mixture over the top.
- Let it cool for a few minutes, then cut into squares and serve warm.
