- Green chili - 1 (slit)
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon

- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Vegetable broth - 1 cup
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large pan over medium heat. Add cumin seeds and sauté until they start to splutter.
- Add the chopped onion and sauté until it becomes translucent.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add the diced carrot, bell pepper, and zucchini. Sauté for about 5 minutes until the vegetables begin to soften.
- Add the chopped tomato, turmeric powder, coriander powder, cumin powder, and salt. Cook until the tomatoes break down and the mixture becomes saucy, about 3-4 minutes.
- Stir in the cooked chickpeas and vegetable broth. Mix well and let it simmer for 10-15 minutes on low heat.
- Add garam masala and stir well. Cook for an additional 2 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
