  • Bell pepper - 1 medium (diced)
  • Zucchini - 1 medium (diced)
  • Onion - 1 medium (finely chopped)
  • Tomato - 1 medium (chopped)
  • Garlic - 2 cloves (minced)
  • Ginger - 1 inch (grated)
  • Green chili - 1 (slit)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Vegetable broth - 1 cup
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large pan over medium heat. Add cumin seeds and sauté until they start to splutter.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Add the diced carrot, bell pepper, and zucchini. Sauté for about 5 minutes until the vegetables begin to soften.
  5. Add the chopped tomato, turmeric powder, coriander powder, cumin powder, and salt. Cook until the tomatoes break down and the mixture becomes saucy, about 3-4 minutes.
  6. Stir in the cooked chickpeas and vegetable broth. Mix well and let it simmer for 10-15 minutes on low heat.
  7. Add garam masala and stir well. Cook for an additional 2 minutes.
  8. Remove from heat and garnish with fresh cilantro before serving.
