- Vegetable oil - 2 tablespoons

Steps
- Heat the vegetable oil in a large pan over medium heat.
- Add cumin seeds and let them sizzle for 30 seconds.
- Stir in the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and ginger, and cook for another minute until fragrant.
- Mix in the chopped tomato and cook until it softens, about 3-4 minutes.
- Add the turmeric powder, coriander powder, red chili powder, and salt, stirring well to combine.
- Add the diced potatoes and cauliflower florets to the pan, stirring to coat them with the spices.
- Pour in a splash of water (about 50 ml) to help steam the vegetables, cover the pan, and cook for 10 minutes on low heat.
- After 10 minutes, add the green peas and garam masala, stirring to combine.
- Cover and cook for an additional 5-7 minutes, or until the vegetables are tender.
- Remove from heat, stir in the lemon juice, and garnish with chopped cilantro before serving.
