Vegan Vada

Ingredients
- Split urad dal (black gram) - 100 grams
- Water - 1 cup
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Curry leaves - 8-10, chopped
- Coriander leaves - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Rice flour - 2 tablespoons
- Oil - for deep frying
Steps
- Soak the split urad dal in water for 4-6 hours or overnight.
- Drain the soaked dal and blend it in a food processor with a little water until you get a smooth batter.
- Transfer the batter to a mixing bowl and add chopped onions, green chili, ginger, curry leaves, coriander leaves, salt, black pepper, and rice flour. Mix well to combine.
- Heat oil in a deep frying pan over medium heat.
- Wet your hands and take a small portion of the batter, shaping it into a round fritter or vada.
- Carefully drop the shaped vadas into the hot oil, frying in batches to avoid overcrowding.
- Fry the vadas for about 3-4 minutes or until they are golden brown and crispy on all sides.
- Remove the vadas with a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot with coconut chutney or sambar.
