Vegan Vada

Vegan Vada is a delightful Indian snack made from spiced lentils, deep-fried to golden perfection. These crispy fritters are perfect for a lunch dish, served with coconut chutney or sambar.

Ingredients

  • Split urad dal (black gram) - 100 grams
  • Water - 1 cup
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Curry leaves - 8-10, chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Rice flour - 2 tablespoons
  • Oil - for deep frying

Steps

  1. Soak the split urad dal in water for 4-6 hours or overnight.
  2. Drain the soaked dal and blend it in a food processor with a little water until you get a smooth batter.
  3. Transfer the batter to a mixing bowl and add chopped onions, green chili, ginger, curry leaves, coriander leaves, salt, black pepper, and rice flour. Mix well to combine.
  4. Heat oil in a deep frying pan over medium heat.
  5. Wet your hands and take a small portion of the batter, shaping it into a round fritter or vada.
  6. Carefully drop the shaped vadas into the hot oil, frying in batches to avoid overcrowding.
  7. Fry the vadas for about 3-4 minutes or until they are golden brown and crispy on all sides.
  8. Remove the vadas with a slotted spoon and drain on paper towels to remove excess oil.
  9. Serve hot with coconut chutney or sambar.
