Vegan Tikki

- Potatoes - 300 grams
- Green peas - 100 grams (fresh or frozen)
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped (adjust to taste)
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon
- Rice flour - 2 tablespoons (for binding)
- Fresh coriander leaves - 2 tablespoons, chopped
- Oil - for shallow frying (about 3 tablespoons)
Steps
- Boil the potatoes in a pot of water until they are tender, about 15-20 minutes. Drain and let them cool slightly.
- In a mixing bowl, mash the boiled potatoes until smooth.
- Add the green peas to the mashed potatoes and mash them together until combined.
- Stir in the chopped onion, ginger, garlic, green chili, coriander powder, cumin powder, garam masala, salt, black pepper, and chopped coriander leaves. Mix well.
- Sprinkle rice flour into the mixture for binding and mix until the mixture holds together.
- Divide the mixture into equal portions and shape each portion into a flat round patty (tikki).
- Heat oil in a non-stick frying pan over medium heat. Once hot, add the tikkis in batches, making sure not to overcrowd the pan.
- Fry each tikki for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed.
- Remove the tikkis from the pan and place them on paper towels to absorb excess oil.
- Serve hot with mint chutney or ketchup.
