Vegan Tikka Masala

Ingredients

  • Firm tofu - 200 grams
  • Lemon juice - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Canned tomatoes - 400 grams (1 can)
  • Coconut milk - 200 ml
  • Fresh cilantro - a handful, chopped
  • Cooked basmati rice - to serve

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix the tofu cubes with lemon juice, turmeric, garam masala, cumin, paprika, and salt. Let it marinate for at least 10 minutes.
  3. Heat 1 tablespoon of oil in a pan over medium heat, and add the marinated tofu cubes. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same pan, add the remaining tablespoon of oil and sauté the chopped onion for 5 minutes until translucent.
  5. Add the minced garlic and grated ginger to the pan, stirring for another 1-2 minutes until fragrant.
  6. Pour in the canned tomatoes and cook for 5 minutes, allowing the mixture to simmer.
  7. Blend the tomato mixture until smooth using an immersion blender or regular blender, then return it to the pan.
  8. Stir in the coconut milk and bring the sauce to a gentle simmer. Add the cooked tofu and simmer for another 5 minutes to heat through.
  9. Serve hot, garnished with chopped cilantro, alongside cooked basmati rice.
