Vegan Tikka Masala
Vegan Tikka Masala is a rich and creamy dish made with marinated tofu and a fragrant tomato-based sauce, perfect for a satisfying lunch. This plant-based version captures the essence of traditional tikka masala while being entirely vegan.

Ingredients
- Firm tofu - 200 grams
- Lemon juice - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Canned tomatoes - 400 grams (1 can)
- Coconut milk - 200 ml
- Fresh cilantro - a handful, chopped
- Cooked basmati rice - to serve
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, mix the tofu cubes with lemon juice, turmeric, garam masala, cumin, paprika, and salt. Let it marinate for at least 10 minutes.
- Heat 1 tablespoon of oil in a pan over medium heat, and add the marinated tofu cubes. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same pan, add the remaining tablespoon of oil and sauté the chopped onion for 5 minutes until translucent.
- Add the minced garlic and grated ginger to the pan, stirring for another 1-2 minutes until fragrant.
- Pour in the canned tomatoes and cook for 5 minutes, allowing the mixture to simmer.
- Blend the tomato mixture until smooth using an immersion blender or regular blender, then return it to the pan.
- Stir in the coconut milk and bring the sauce to a gentle simmer. Add the cooked tofu and simmer for another 5 minutes to heat through.
- Serve hot, garnished with chopped cilantro, alongside cooked basmati rice.
