- Jowar flour - 100 grams
- Besan (chickpea flour) - 50 grams
- Rice flour - 30 grams
- Chopped spinach - 50 grams
- Chopped cilantro - 2 tablespoons
- Chopped onion - 1 small
- Green chili (finely chopped) - 1
- Ginger (grated) - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Water - as needed
- Oil - for cooking
Steps
- In a mixing bowl, combine jowar flour, besan, rice flour, chopped spinach, chopped cilantro, chopped onion, green chili, grated ginger, cumin seeds, turmeric powder, and salt.
- Gradually add water to the mixture, kneading until a soft dough forms. The dough should be pliable but not sticky.
- Divide the dough into equal portions and roll each portion into a ball.
- On a flat surface, place a ball of dough between two sheets of parchment paper and flatten it into a round disc, about 1/4 inch thick.
- Heat a tava or non-stick skillet over medium heat and lightly grease it with oil.
- Carefully place the flattened thalipeeth on the hot tava and cook for about 3-4 minutes on one side until golden brown.
- Flip the thalipeeth, drizzle a little oil around the edges, and cook for another 3-4 minutes until the other side is golden and cooked through.
- Repeat the process for the remaining dough balls.
- Serve hot with vegan yogurt or pickle.
