Ingredients

  • Jowar flour - 100 grams
  • Besan (chickpea flour) - 50 grams
  • Rice flour - 30 grams
  • Chopped spinach - 50 grams
  • Chopped cilantro - 2 tablespoons
  • Chopped onion - 1 small
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Water - as needed
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine jowar flour, besan, rice flour, chopped spinach, chopped cilantro, chopped onion, green chili, grated ginger, cumin seeds, turmeric powder, and salt.
  2. Gradually add water to the mixture, kneading until a soft dough forms. The dough should be pliable but not sticky.
  3. Divide the dough into equal portions and roll each portion into a ball.
  4. On a flat surface, place a ball of dough between two sheets of parchment paper and flatten it into a round disc, about 1/4 inch thick.
  5. Heat a tava or non-stick skillet over medium heat and lightly grease it with oil.
  6. Carefully place the flattened thalipeeth on the hot tava and cook for about 3-4 minutes on one side until golden brown.
  7. Flip the thalipeeth, drizzle a little oil around the edges, and cook for another 3-4 minutes until the other side is golden and cooked through.
  8. Repeat the process for the remaining dough balls.
  9. Serve hot with vegan yogurt or pickle.
