- Chickpeas - 200 grams (cooked)
- Carrot - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cilantro - 2 tablespoons, chopped
- Tandoori masala - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Breadcrumbs - 50 grams
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Vegan yogurt - 100 grams
- Mint - 1 tablespoon, chopped
Steps
- In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the grated carrot, chopped red onion, minced garlic, grated ginger, chopped cilantro, tandoori masala, ground cumin, salt, and breadcrumbs to the bowl. Mix until all ingredients are well combined.
- Divide the mixture into two equal portions and shape each portion into a patty.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
- In a small bowl, mix the vegan yogurt with chopped mint, seasoning with a pinch of salt to taste for the sauce.
- To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the chickpea patty, top with sliced tomato and cucumber, and drizzle with the mint yogurt sauce.
- Cover with the top half of the bun and serve immediately.
