Ingredients

  • Chickpeas - 200 grams (cooked)
  • Carrot - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Tandoori masala - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Vegan yogurt - 100 grams
  • Mint - 1 tablespoon, chopped

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the grated carrot, chopped red onion, minced garlic, grated ginger, chopped cilantro, tandoori masala, ground cumin, salt, and breadcrumbs to the bowl. Mix until all ingredients are well combined.
  3. Divide the mixture into two equal portions and shape each portion into a patty.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
  5. In a small bowl, mix the vegan yogurt with chopped mint, seasoning with a pinch of salt to taste for the sauce.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the chickpea patty, top with sliced tomato and cucumber, and drizzle with the mint yogurt sauce.
  7. Cover with the top half of the bun and serve immediately.
