Ingredients

  • Fresh spinach - 300 grams
  • Firm tofu - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Tomato - 1 medium, pureed
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Coconut milk - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Blanch the spinach in boiling water for 2 minutes, then transfer to cold water. Drain and blend into a smooth paste; set aside.
  2. Press the tofu to remove excess moisture, then cut into cubes.
  3. In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
  4. Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent, about 5 minutes.
  5. Stir in the pureed tomato, turmeric, and salt. Cook for 5-7 minutes until the mixture thickens.
  6. Add the spinach puree and coconut milk to the skillet. Mix well and simmer for 5 minutes.
  7. Gently fold in the tofu cubes, and sprinkle with garam masala, black pepper, and lemon juice. Cook for an additional 5 minutes.
  8. Serve hot with rice or naan.
