- Fresh spinach - 300 grams
- Firm tofu - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Tomato - 1 medium, pureed
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Coconut milk - 100 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Blanch the spinach in boiling water for 2 minutes, then transfer to cold water. Drain and blend into a smooth paste; set aside.
- Press the tofu to remove excess moisture, then cut into cubes.
- In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
- Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent, about 5 minutes.
- Stir in the pureed tomato, turmeric, and salt. Cook for 5-7 minutes until the mixture thickens.
- Add the spinach puree and coconut milk to the skillet. Mix well and simmer for 5 minutes.
- Gently fold in the tofu cubes, and sprinkle with garam masala, black pepper, and lemon juice. Cook for an additional 5 minutes.
- Serve hot with rice or naan.
