Ingredients

  • Spinach - 300 grams
  • Potato - 200 grams, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon (adjust to taste)
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 100 milliliters

Steps

  1. Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the diced potatoes and sauté for 2-3 minutes, then add the turmeric powder, coriander powder, chili powder, and salt. Mix well to coat the potatoes with the spices.
  5. Pour in the pureed tomato and water, stir, and bring to a simmer. Cover the pan and cook for about 10 minutes, or until the potatoes are tender.
  6. While the potatoes are cooking, wash the spinach thoroughly and blanch it in boiling water for about 2 minutes, then drain and chop.
  7. Once the potatoes are tender, add the chopped spinach to the pan along with garam masala. Stir everything together and cook for an additional 3-5 minutes.
  8. Taste and adjust seasoning if necessary. Serve warm with rice or flatbread.
