- Spinach - 300 grams
- Potato - 200 grams, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Chili powder - 1/2 teaspoon (adjust to taste)
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 100 milliliters
Steps
- Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it becomes translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced potatoes and sauté for 2-3 minutes, then add the turmeric powder, coriander powder, chili powder, and salt. Mix well to coat the potatoes with the spices.
- Pour in the pureed tomato and water, stir, and bring to a simmer. Cover the pan and cook for about 10 minutes, or until the potatoes are tender.
- While the potatoes are cooking, wash the spinach thoroughly and blanch it in boiling water for about 2 minutes, then drain and chop.
- Once the potatoes are tender, add the chopped spinach to the pan along with garam masala. Stir everything together and cook for an additional 3-5 minutes.
- Taste and adjust seasoning if necessary. Serve warm with rice or flatbread.
