Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (adjust as needed)
  • Salt - 1/2 teaspoon
  • Oil (for frying) - 1 cup
  • Potatoes - 2 medium, boiled and mashed
  • Green peas - 1/2 cup (fresh or frozen)
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
  2. In a pan, heat 2 tablespoons of oil over medium heat and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add ginger, green chili, and chopped tomato to the pan. Cook until the tomatoes soften.
  4. Stir in turmeric powder, coriander powder, and garam masala, cooking for another minute.
  5. Add the mashed potatoes and green peas to the pan, mixing well to combine. Cook for 5-7 minutes, adjusting seasoning if necessary. Remove from heat and garnish with chopped cilantro.
  6. Divide the rested dough into small balls. Roll each ball into a small circle, about 4 inches in diameter.
  7. In a deep frying pan, heat oil for frying. Once hot, gently slide in the rolled puris one at a time. Fry until they puff up and turn golden brown on both sides. Remove and drain on paper towels.
  8. Serve hot puris with the potato and pea bhaji on the side.
