Vegan Puri Bhaji

- Whole wheat flour - 1 cup
- Water - 1/4 cup (adjust as needed)
- Salt - 1/2 teaspoon
- Oil (for frying) - 1 cup
- Potatoes - 2 medium, boiled and mashed
- Green peas - 1/2 cup (fresh or frozen)
- Onion - 1 small, finely chopped
- Tomato - 1 small, chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
- In a pan, heat 2 tablespoons of oil over medium heat and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger, green chili, and chopped tomato to the pan. Cook until the tomatoes soften.
- Stir in turmeric powder, coriander powder, and garam masala, cooking for another minute.
- Add the mashed potatoes and green peas to the pan, mixing well to combine. Cook for 5-7 minutes, adjusting seasoning if necessary. Remove from heat and garnish with chopped cilantro.
- Divide the rested dough into small balls. Roll each ball into a small circle, about 4 inches in diameter.
- In a deep frying pan, heat oil for frying. Once hot, gently slide in the rolled puris one at a time. Fry until they puff up and turn golden brown on both sides. Remove and drain on paper towels.
- Serve hot puris with the potato and pea bhaji on the side.
