Vegan Puran Poli

Ingredients
- Whole wheat flour - 1 cup
- Water - 1/4 cup (plus extra for kneading)
- Split yellow lentils (moong dal) - 1/2 cup
- Jaggery (grated) - 1/4 cup
- Cardamom powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Oil (for cooking) - 1 tablespoon
Steps
- Rinse the split yellow lentils under cold water until the water runs clear, then soak them in water for about 30 minutes.
- Drain the lentils and cook them in a pot with 1 cup of water until soft, about 15 minutes. Drain any excess water and let them cool slightly.
- In a mixing bowl, mash the cooked lentils, then add the grated jaggery, cardamom powder, turmeric powder, and salt. Mix well to form a smooth filling.
- In another bowl, combine the whole wheat flour and a pinch of salt. Gradually add water while kneading to form a soft and pliable dough. Cover the dough with a damp cloth and let it rest for 10 minutes.
- Divide the dough into 4 equal portions and roll each portion into a small ball.
- Take one ball of dough and flatten it into a small disc. Place a spoonful of the lentil filling in the center, then fold the edges over to seal the filling inside. Gently flatten it out with your hands.
- Roll the stuffed dough ball into a larger disc, being careful not to let the filling ooze out. Repeat this process for the remaining dough and filling.
- Heat a tava (griddle) over medium heat. Place one rolled Puran Poli on the tava and cook until small bubbles appear on the surface, about 1-2 minutes.
- Flip and lightly brush with oil. Cook for another 1-2 minutes until golden brown. Repeat for the remaining Puran Polis.
- Serve warm with a drizzle of plant-based ghee or vegan butter.
