Ingredients

  • Firm tofu - 200 grams, pressed and cut into prawn-sized pieces
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Tomato paste - 2 tablespoons
  • White vinegar - 2 tablespoons
  • Red chili powder - 1 tablespoon (adjust for spice preference)
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Brown sugar - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Water - 200 ml

Steps

  1. In a bowl, combine the pressed tofu pieces with white vinegar, turmeric, and a pinch of salt. Let marinate for 15 minutes.
  2. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown, about 5-7 minutes.
  4. Stir in minced garlic and ginger, and cook for an additional 2 minutes until fragrant.
  5. Add tomato paste, red chili powder, coriander powder, cumin powder, and brown sugar. Mix well and cook for 3-4 minutes until the spices are well combined.
  6. Pour in the water and bring the mixture to a simmer. Allow it to cook for 5 minutes to thicken.
  7. Gently add the marinated tofu pieces into the sauce, ensuring they are well coated. Simmer for another 5-7 minutes, allowing the tofu to absorb the flavors.
  8. Taste and adjust salt as needed. Garnish with fresh cilantro before serving.
