- Firm tofu - 200 grams, pressed and cut into prawn-sized pieces
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Tomato paste - 2 tablespoons
- White vinegar - 2 tablespoons
- Red chili powder - 1 tablespoon (adjust for spice preference)
- Turmeric powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Brown sugar - 1 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
- Water - 200 ml
Steps
- In a bowl, combine the pressed tofu pieces with white vinegar, turmeric, and a pinch of salt. Let marinate for 15 minutes.
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add chopped onions and sauté until golden brown, about 5-7 minutes.
- Stir in minced garlic and ginger, and cook for an additional 2 minutes until fragrant.
- Add tomato paste, red chili powder, coriander powder, cumin powder, and brown sugar. Mix well and cook for 3-4 minutes until the spices are well combined.
- Pour in the water and bring the mixture to a simmer. Allow it to cook for 5 minutes to thicken.
- Gently add the marinated tofu pieces into the sauce, ensuring they are well coated. Simmer for another 5-7 minutes, allowing the tofu to absorb the flavors.
- Taste and adjust salt as needed. Garnish with fresh cilantro before serving.
