Ingredients

  • Basmati rice - 1 cup
  • Vegan shrimp (plant-based) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Tomato (chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Vegetable broth - 2 cups
  • Coconut milk - 1/2 cup
  • Oil (coconut or vegetable) - 2 tablespoons
  • Salt - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  2. In a large pan, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion and sauté until it becomes translucent. Then add minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Stir in the chopped tomato, turmeric powder, and salt. Cook until the tomatoes soften, about 5 minutes.
  5. Add the vegan shrimp to the pan and sauté for 3-4 minutes until heated through.
  6. Now add the soaked and drained basmati rice to the pan, gently mixing to combine with the onion and shrimp mixture.
  7. Pour in the vegetable broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
  8. Let it simmer for about 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  9. Once cooked, fluff the rice with a fork and stir in the chopped cilantro and mint leaves.
  10. Serve warm, garnished with additional herbs if desired.
