- Basmati rice - 1 cup
- Vegan shrimp (plant-based) - 200 grams
- Onion (finely chopped) - 1 medium
- Tomato (chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Vegetable broth - 2 cups
- Coconut milk - 1/2 cup
- Oil (coconut or vegetable) - 2 tablespoons
- Salt - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- In a large pan, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it becomes translucent. Then add minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Stir in the chopped tomato, turmeric powder, and salt. Cook until the tomatoes soften, about 5 minutes.
- Add the vegan shrimp to the pan and sauté for 3-4 minutes until heated through.
- Now add the soaked and drained basmati rice to the pan, gently mixing to combine with the onion and shrimp mixture.
- Pour in the vegetable broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
- Let it simmer for about 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Once cooked, fluff the rice with a fork and stir in the chopped cilantro and mint leaves.
- Serve warm, garnished with additional herbs if desired.
