Ingredients

  • Vegan prawns - 200 grams
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Tomato - 1 medium, pureed
  • Coconut milk - 200 ml
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Green chili - 1, slit
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  4. Add the pureed tomato and cook for 5 minutes until the mixture thickens.
  5. Stir in coriander powder, cumin powder, turmeric powder, and garam masala, cooking for another 2 minutes.
  6. Add the vegan prawns and slit green chili, stirring well to coat them with the spice mixture.
  7. Pour in the coconut milk and season with salt. Simmer for 10 minutes, allowing the flavors to meld.
  8. Remove from heat and add lemon juice.
  9. Garnish with fresh cilantro before serving.
