- Basmati rice - 1 cup
- Jackfruit (canned, young, drained and shredded) - 200 grams
- Onion (sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 inch piece
- Green chili (slit) - 1
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Biryani masala powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Cardamom pods - 2
- Cloves - 2
- Cinnamon stick - 1 inch
- Vegetable broth - 1.5 cups
- Coconut milk - 1/4 cup
- Salt - to taste
- Oil - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pan, heat the oil over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick, and sauté for a minute until fragrant.
- Add sliced onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and slit green chili, and cook for another 2 minutes.
- Stir in the chopped tomato and cook until it softens, about 3-4 minutes. Add turmeric powder and biryani masala powder, and mix well.
- Add the shredded jackfruit to the pan, stirring to coat it with the spices. Cook for 5-7 minutes until the jackfruit is tender.
- Drain the soaked rice and add it to the pan. Gently mix it with the jackfruit and spices.
- Pour in the vegetable broth and coconut milk, and add salt to taste. Bring to a gentle boil.
- Reduce the heat to low, cover the pan with a lid, and let it cook for 15-20 minutes until the rice is fully cooked and the liquid is absorbed.
- Once cooked, fluff the biryani with a fork, and garnish with chopped cilantro and mint leaves before serving.
