Ingredients

  • Basmati rice - 1 cup
  • Jackfruit (canned, young, drained and shredded) - 200 grams
  • Onion (sliced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 inch piece
  • Green chili (slit) - 1
  • Cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Biryani masala powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cardamom pods - 2
  • Cloves - 2
  • Cinnamon stick - 1 inch
  • Vegetable broth - 1.5 cups
  • Coconut milk - 1/4 cup
  • Salt - to taste
  • Oil - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pan, heat the oil over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick, and sauté for a minute until fragrant.
  3. Add sliced onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and slit green chili, and cook for another 2 minutes.
  4. Stir in the chopped tomato and cook until it softens, about 3-4 minutes. Add turmeric powder and biryani masala powder, and mix well.
  5. Add the shredded jackfruit to the pan, stirring to coat it with the spices. Cook for 5-7 minutes until the jackfruit is tender.
  6. Drain the soaked rice and add it to the pan. Gently mix it with the jackfruit and spices.
  7. Pour in the vegetable broth and coconut milk, and add salt to taste. Bring to a gentle boil.
  8. Reduce the heat to low, cover the pan with a lid, and let it cook for 15-20 minutes until the rice is fully cooked and the liquid is absorbed.
  9. Once cooked, fluff the biryani with a fork, and garnish with chopped cilantro and mint leaves before serving.
