Ingredients

  • Chickpea flour (besan) - 100 grams
  • Water - 400 ml
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili (finely chopped) - 1
  • Garlic (minced) - 2 cloves
  • Curry leaves - 8-10 leaves
  • Onion (finely chopped) - 1 medium
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves (chopped) - for garnish

Steps

  1. In a bowl, whisk the chickpea flour with 400 ml of water until smooth and free of lumps. Set aside.
  2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
  3. Add the finely chopped onion, green chili, and minced garlic to the pan. Sauté until the onion turns translucent.
  4. Add curry leaves and turmeric powder, stirring for a minute to release the flavors.
  5. Pour the chickpea flour mixture into the pan, stirring continuously to avoid lumps.
  6. Add salt to taste and cook on low heat for about 10-15 minutes, stirring occasionally until the mixture thickens.
  7. Once thickened to your desired consistency, remove from heat and garnish with fresh coriander leaves.
  8. Serve hot with rice or flatbreads.
