- Chickpea flour (besan) - 100 grams
- Water - 400 ml
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chili (finely chopped) - 1
- Garlic (minced) - 2 cloves
- Curry leaves - 8-10 leaves
- Onion (finely chopped) - 1 medium
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves (chopped) - for garnish
Steps
- In a bowl, whisk the chickpea flour with 400 ml of water until smooth and free of lumps. Set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
- Add the finely chopped onion, green chili, and minced garlic to the pan. Sauté until the onion turns translucent.
- Add curry leaves and turmeric powder, stirring for a minute to release the flavors.
- Pour the chickpea flour mixture into the pan, stirring continuously to avoid lumps.
- Add salt to taste and cook on low heat for about 10-15 minutes, stirring occasionally until the mixture thickens.
- Once thickened to your desired consistency, remove from heat and garnish with fresh coriander leaves.
- Serve hot with rice or flatbreads.
