Ingredients

  • Rice flour - 1 cup
  • Water - 1/2 cup
  • Salt - 1/4 teaspoon
  • Grated coconut - 1/2 cup
  • Jaggery (grated) - 1/4 cup
  • Cardamom powder - 1/2 teaspoon
  • Plant-based oil (for greasing) - 1 tablespoon

Steps

  1. In a mixing bowl, combine the rice flour and salt. Gradually add water while kneading to form a smooth dough.
  2. Cover the dough with a damp cloth and let it rest for 10 minutes.
  3. In a separate bowl, mix the grated coconut, jaggery, and cardamom powder until well combined.
  4. Divide the dough into small balls (about the size of a golf ball) and flatten each ball into a small disc.
  5. Place a tablespoon of the coconut-jaggery mixture in the center of each disc.
  6. Fold the edges over the filling to create a half-moon shape and seal the edges securely.
  7. Grease a steamer basket with a little oil and arrange the pithas in it, leaving space between each.
  8. Steam the pithas for about 15 minutes until they are cooked through and slightly translucent.
  9. Remove from the steamer and let them cool for a few minutes before serving.
