Vegan Pitha

- Rice flour - 1 cup
- Water - 1/2 cup
- Salt - 1/4 teaspoon
- Grated coconut - 1/2 cup
- Jaggery (grated) - 1/4 cup
- Cardamom powder - 1/2 teaspoon
- Plant-based oil (for greasing) - 1 tablespoon
Steps
- In a mixing bowl, combine the rice flour and salt. Gradually add water while kneading to form a smooth dough.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- In a separate bowl, mix the grated coconut, jaggery, and cardamom powder until well combined.
- Divide the dough into small balls (about the size of a golf ball) and flatten each ball into a small disc.
- Place a tablespoon of the coconut-jaggery mixture in the center of each disc.
- Fold the edges over the filling to create a half-moon shape and seal the edges securely.
- Grease a steamer basket with a little oil and arrange the pithas in it, leaving space between each.
- Steam the pithas for about 15 minutes until they are cooked through and slightly translucent.
- Remove from the steamer and let them cool for a few minutes before serving.
