Vegan Pesarattu
Vegan Pesarattu is a traditional South Indian green gram pancake, packed with protein and bursting with flavor. Served with a tangy ginger chutney, it's a wholesome and satisfying dish perfect for lunch.

Ingredients
- Green gram (moong dal) - 1 cup
- Water - 1.5 cups
- Ginger - 1 inch piece, grated
- Green chili - 1, chopped
- Cumin seeds - 1 tsp
- Salt - 1 tsp
- Onion - 1 small, finely chopped
- Coriander leaves - 2 tbsp, chopped
- Oil - 2 tbsp (for cooking)
Steps
- Soak the green gram in water for at least 4 hours or overnight.
- Drain the soaked green gram and blend it with 1.5 cups of water, grated ginger, chopped green chili, cumin seeds, and salt until smooth.
- Transfer the batter to a bowl and stir in the finely chopped onion and coriander leaves.
- Heat a non-stick pan over medium heat and add a little oil.
- Pour a ladleful of the batter onto the pan and spread it into a thin circle.
- Cook for about 2-3 minutes on one side until golden brown, then flip and cook for another 1-2 minutes.
- Repeat the process with the remaining batter, adding more oil as needed.
- Serve hot with ginger chutney or coconut chutney.
