Vegan Pesarattu

Vegan Pesarattu is a traditional South Indian green gram pancake, packed with protein and bursting with flavor. Served with a tangy ginger chutney, it's a wholesome and satisfying dish perfect for lunch.

Ingredients

  • Green gram (moong dal) - 1 cup
  • Water - 1.5 cups
  • Ginger - 1 inch piece, grated
  • Green chili - 1, chopped
  • Cumin seeds - 1 tsp
  • Salt - 1 tsp
  • Onion - 1 small, finely chopped
  • Coriander leaves - 2 tbsp, chopped
  • Oil - 2 tbsp (for cooking)

Steps

  1. Soak the green gram in water for at least 4 hours or overnight.
  2. Drain the soaked green gram and blend it with 1.5 cups of water, grated ginger, chopped green chili, cumin seeds, and salt until smooth.
  3. Transfer the batter to a bowl and stir in the finely chopped onion and coriander leaves.
  4. Heat a non-stick pan over medium heat and add a little oil.
  5. Pour a ladleful of the batter onto the pan and spread it into a thin circle.
  6. Cook for about 2-3 minutes on one side until golden brown, then flip and cook for another 1-2 minutes.
  7. Repeat the process with the remaining batter, adding more oil as needed.
  8. Serve hot with ginger chutney or coconut chutney.
