Vegan Pani Puri

- Semolina - 100 grams
- All-purpose flour - 50 grams
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Warm water - as needed (approximately 120 ml)
- Chickpeas - 100 grams (cooked)
- Boiled potato - 1 medium, mashed
- Red onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Chaat masala - 1 teaspoon
- Lemon juice - 1 tablespoon
- Pani (spiced water) - 500 ml
- Mint leaves - 1/2 cup
- Tamarind pulp - 2 tablespoons
- Green chili - 1, chopped
- Black salt - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
Steps
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add warm water to form a smooth, stiff dough. Cover and let it rest for 15 minutes.
- While the dough rests, prepare the filling by mixing cooked chickpeas, mashed potato, chopped onion, cilantro, chaat masala, and lemon juice in a bowl. Set aside.
- To make the Pani, blend mint leaves, tamarind pulp, chopped green chili, black salt, cumin powder, and 500 ml of water in a blender until smooth. Strain the mixture through a sieve into a bowl and chill in the refrigerator.
- After resting, knead the dough for a minute and divide it into small balls. Roll each ball into a thin circle (about 3 inches in diameter).
- Heat oil in a deep pan over medium heat. Fry the rolled puris until they puff up and turn golden brown, about 30 seconds to 1 minute. Remove and drain on paper towels.
- To serve, crack the top of each puri, fill it with the chickpea-potato mixture, and dip it into the chilled Pani. Enjoy immediately.
