Ingredients

  • Semolina - 100 grams
  • All-purpose flour - 50 grams
  • Baking soda - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Warm water - as needed (approximately 120 ml)
  • Chickpeas - 100 grams (cooked)
  • Boiled potato - 1 medium, mashed
  • Red onion - 1 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Chaat masala - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Pani (spiced water) - 500 ml
  • Mint leaves - 1/2 cup
  • Tamarind pulp - 2 tablespoons
  • Green chili - 1, chopped
  • Black salt - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add warm water to form a smooth, stiff dough. Cover and let it rest for 15 minutes.
  2. While the dough rests, prepare the filling by mixing cooked chickpeas, mashed potato, chopped onion, cilantro, chaat masala, and lemon juice in a bowl. Set aside.
  3. To make the Pani, blend mint leaves, tamarind pulp, chopped green chili, black salt, cumin powder, and 500 ml of water in a blender until smooth. Strain the mixture through a sieve into a bowl and chill in the refrigerator.
  4. After resting, knead the dough for a minute and divide it into small balls. Roll each ball into a thin circle (about 3 inches in diameter).
  5. Heat oil in a deep pan over medium heat. Fry the rolled puris until they puff up and turn golden brown, about 30 seconds to 1 minute. Remove and drain on paper towels.
  6. To serve, crack the top of each puri, fill it with the chickpea-potato mixture, and dip it into the chilled Pani. Enjoy immediately.
