Ingredients

  • Chickpea flour - 100 grams
  • Water - 120 ml
  • Cauliflower florets - 100 grams
  • Spinach leaves - 50 grams
  • Potato - 1 medium, thinly sliced
  • Onion - 1 small, thinly sliced
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, baking powder, and salt to form a smooth batter.
  2. Add the chopped vegetables (cauliflower, spinach, potato, onion, and green chili) to the batter and mix until well coated.
  3. Heat oil in a deep frying pan over medium heat. Once hot, carefully drop spoonfuls of the vegetable-batter mixture into the oil.
  4. Fry the pakoras in batches until they are golden brown and crispy, about 4-5 minutes per batch.
  5. Remove the pakoras with a slotted spoon and drain them on paper towels to remove excess oil.
  6. Serve hot with mint chutney or tamarind sauce.
