- Water - 120 ml
- Cauliflower florets - 100 grams
- Spinach leaves - 50 grams
- Potato - 1 medium, thinly sliced
- Onion - 1 small, thinly sliced
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Oil - for deep frying
Steps
- In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, baking powder, and salt to form a smooth batter.
- Add the chopped vegetables (cauliflower, spinach, potato, onion, and green chili) to the batter and mix until well coated.
- Heat oil in a deep frying pan over medium heat. Once hot, carefully drop spoonfuls of the vegetable-batter mixture into the oil.
- Fry the pakoras in batches until they are golden brown and crispy, about 4-5 minutes per batch.
- Remove the pakoras with a slotted spoon and drain them on paper towels to remove excess oil.
- Serve hot with mint chutney or tamarind sauce.
