Ingredients

  • Fresh methi (fenugreek leaves) - 150 grams
  • Red lentils (masoor dal) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Oil - 1 tablespoon (preferably mustard or coconut oil)
  • Water - 3 cups

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then soak them in water for 15 minutes.
  2. Heat oil in a pot over medium heat and add cumin seeds. Let them sizzle for a few seconds.
  3. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  5. Add the chopped tomato, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes soften, about 5 minutes.
  6. Drain the soaked lentils and add them to the pot along with 3 cups of water. Stir well and bring to a boil.
  7. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the lentils are cooked through and soft.
  8. Meanwhile, rinse the fresh methi leaves and chop them coarsely.
  9. Once the lentils are cooked, stir in the methi leaves and cook for an additional 5 minutes, allowing the flavors to meld.
  10. Taste and adjust seasoning if necessary. Serve hot with rice or flatbreads.
