- King oyster mushrooms - 200 grams, sliced
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Green chili - 1, slit
- Tomato - 1 medium, chopped
- Malvani masala - 2 tablespoons
- Coconut milk - 400 ml
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat coconut oil in a pan over medium heat.
- Add chopped onions and sauté until translucent.
- Stir in minced garlic, grated ginger, and slit green chili; sauté for 2 minutes until fragrant.
- Add chopped tomatoes and cook until soft.
- Sprinkle in Malvani masala and turmeric powder; mix well and cook for another 2 minutes.
- Add sliced king oyster mushrooms and stir to coat them with the spice mixture.
- Pour in the coconut milk, mix well, and bring to a simmer.
- Season with salt to taste and let it cook for 10-15 minutes until mushrooms are tender.
- Remove from heat and stir in lemon juice.
- Garnish with fresh coriander leaves before serving.
