Ingredients

  • King oyster mushrooms - 200 grams, sliced
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green chili - 1, slit
  • Tomato - 1 medium, chopped
  • Malvani masala - 2 tablespoons
  • Coconut milk - 400 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili; sauté for 2 minutes until fragrant.
  4. Add chopped tomatoes and cook until soft.
  5. Sprinkle in Malvani masala and turmeric powder; mix well and cook for another 2 minutes.
  6. Add sliced king oyster mushrooms and stir to coat them with the spice mixture.
  7. Pour in the coconut milk, mix well, and bring to a simmer.
  8. Season with salt to taste and let it cook for 10-15 minutes until mushrooms are tender.
  9. Remove from heat and stir in lemon juice.
  10. Garnish with fresh coriander leaves before serving.
