Ingredients

  • All-purpose flour - 1 cup
  • Rice flour - 2 tablespoons
  • Coconut milk - 1/2 cup
  • Fresh grated coconut - 1/4 cup
  • Sugar - 1/4 cup
  • Cardamom powder - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 1/4 cup (or as needed)
  • Oil - for frying
  • Chopped nuts (cashews, almonds) - 2 tablespoons (optional)
  • Maple syrup or agave nectar - for drizzling (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour, rice flour, grated coconut, sugar, cardamom powder, and baking powder.
  2. Add the coconut milk and mix well to form a smooth batter. If the batter is too thick, add water gradually until you achieve a pourable consistency.
  3. Heat a pan or skillet over medium heat and add oil for frying.
  4. Once the oil is hot, pour a ladleful of the batter into the pan, spreading it into a round shape. Fry until golden brown on one side, then flip and fry the other side until golden.
  5. Remove the malpua from the pan and place it on a paper towel to absorb excess oil. Repeat with the remaining batter.
  6. Serve warm, drizzled with maple syrup or agave nectar, and topped with chopped nuts if desired.
