- Cardamom powder - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Water - 1/4 cup (or as needed)
- Oil - for frying
- Chopped nuts (cashews, almonds) - 2 tablespoons (optional)
- Maple syrup or agave nectar - for drizzling (optional)
Steps
- In a mixing bowl, combine the all-purpose flour, rice flour, grated coconut, sugar, cardamom powder, and baking powder.
- Add the coconut milk and mix well to form a smooth batter. If the batter is too thick, add water gradually until you achieve a pourable consistency.
- Heat a pan or skillet over medium heat and add oil for frying.
- Once the oil is hot, pour a ladleful of the batter into the pan, spreading it into a round shape. Fry until golden brown on one side, then flip and fry the other side until golden.
- Remove the malpua from the pan and place it on a paper towel to absorb excess oil. Repeat with the remaining batter.
- Serve warm, drizzled with maple syrup or agave nectar, and topped with chopped nuts if desired.
