Ingredients
- Fresh coriander leaves - 200 grams
- Chickpea flour (besan) - 100 grams
- Rice flour - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Ginger paste - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Salt - 1 teaspoon
- Water - 150 milliliters
- Oil - for shallow frying
Steps
- Wash and finely chop the coriander leaves. Set aside.
- In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, ginger paste, cumin seeds, mustard seeds, and salt.
- Gradually add water to the dry ingredients, stirring continuously until a thick batter forms.
- Fold in the chopped coriander leaves until evenly incorporated.
- Grease a steaming dish or tray and pour the batter into it, smoothing the top.
- Steam the mixture for about 20-25 minutes until firm and cooked through.
- Once steamed, allow it to cool for a few minutes before cutting into squares or rectangles.
- Heat oil in a pan over medium heat. Once hot, add the steamed squares and fry until golden brown and crispy on both sides.
- Remove from the pan and place on paper towels to absorb excess oil.
- Serve hot with green chutney or your favorite dipping sauce.
