- Rice flour - 1 cup
- Water - 2 cups
- Oil - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Ginger - 1 inch, grated
- Salt - 1 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a saucepan, bring 2 cups of water to a boil over medium heat.
- Add the oil, cumin seeds, chopped green chili, grated ginger, and salt to the boiling water.
- Lower the heat and slowly add 1 cup of rice flour while continuously stirring to avoid lumps.
- Keep stirring until the mixture thickens and begins to pull away from the sides of the pan, which should take about 5-7 minutes.
- Once thickened, remove from heat and let it cool slightly. Then, knead the mixture into a soft dough.
- Divide the dough into equal portions and shape them into small discs or patties.
- In a steamer, steam the khichu discs for about 10-15 minutes until cooked through.
- Once done, remove from the steamer, drizzle with lemon juice, and garnish with chopped coriander leaves before serving.
