Ingredients

  • Rice flour - 1 cup
  • Water - 2 cups
  • Oil - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Salt - 1 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a saucepan, bring 2 cups of water to a boil over medium heat.
  2. Add the oil, cumin seeds, chopped green chili, grated ginger, and salt to the boiling water.
  3. Lower the heat and slowly add 1 cup of rice flour while continuously stirring to avoid lumps.
  4. Keep stirring until the mixture thickens and begins to pull away from the sides of the pan, which should take about 5-7 minutes.
  5. Once thickened, remove from heat and let it cool slightly. Then, knead the mixture into a soft dough.
  6. Divide the dough into equal portions and shape them into small discs or patties.
  7. In a steamer, steam the khichu discs for about 10-15 minutes until cooked through.
  8. Once done, remove from the steamer, drizzle with lemon juice, and garnish with chopped coriander leaves before serving.
