- Almond milk - 400 ml
- Basmati rice - 50 g
- Maple syrup - 2 tablespoons
- Cardamom pods - 4 (crushed)
- Chopped nuts (almonds, cashews) - 30 g
- Raisins - 20 g
- Coconut oil - 1 teaspoon
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat the coconut oil over medium heat, then add the crushed cardamom pods and sauté for a minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring for a couple of minutes to coat the rice with the oil and cardamom.
- Pour in the almond milk and a pinch of salt, then bring the mixture to a gentle boil.
- Reduce the heat to low and cover the pot, allowing it to simmer for about 20 minutes, stirring occasionally, until the rice is cooked and the mixture thickens.
- Once cooked, stir in the maple syrup, vanilla extract, chopped nuts, and raisins, mixing well.
- Remove from heat and let it sit for a few minutes before serving warm or chilled.
