Vegan Kadai Tofu

Ingredients

  • Tofu - 200 grams
  • Bell peppers (mixed colors) - 200 grams
  • Onion - 1 medium (150 grams)
  • Tomato - 1 medium (100 grams)
  • Ginger - 1 inch piece
  • Garlic - 3 cloves
  • Green chili - 1 (adjust to taste)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Oil (cooking) - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Marinate the tofu cubes with turmeric powder, red chili powder, and a pinch of salt for 10 minutes.
  3. Heat 1 tablespoon of oil in a pan over medium heat, add the marinated tofu, and sauté until golden brown on all sides. Remove and set aside.
  4. In the same pan, add another tablespoon of oil and heat. Add cumin seeds and let them sizzle.
  5. Add finely chopped onion, ginger, garlic, and green chili. Sauté until the onions are translucent.
  6. Add chopped bell peppers and tomato. Cook until the bell peppers are tender, about 5-7 minutes.
  7. Stir in coriander powder, garam masala, and salt. Mix well and let it cook for another 2 minutes.
  8. Add the sautéed tofu back to the pan and gently mix everything together. Cook for an additional 2-3 minutes to combine the flavors.
  9. Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves before serving.
