Ingredients

  • Firm tofu - 200 grams
  • Bell peppers (mixed colors) - 1 cup, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 2 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat the cooking oil in a pan over medium heat, and add cumin seeds. Sauté until they crackle.
  3. Add finely chopped onions and cook until they turn golden brown.
  4. Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
  5. Add the pureed tomatoes and cook until the oil separates from the mixture, about 5-7 minutes.
  6. Sprinkle in coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well.
  7. Add the diced bell peppers and tofu cubes to the pan. Gently fold to coat the tofu and vegetables with the spices.
  8. Cover and cook for 10 minutes, stirring occasionally, until the bell peppers are tender.
  9. Remove from heat and stir in fresh lemon juice.
  10. Garnish with fresh cilantro before serving.
