- Firm tofu - 200 grams
- Bell peppers (mixed colors) - 1 cup, diced
- Onion - 1 medium, finely chopped
- Tomato - 2 medium, pureed
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Fresh cilantro - for garnish
- Lemon juice - 1 tablespoon
Steps
- Press the tofu to remove excess water, then cut it into cubes.
- Heat the cooking oil in a pan over medium heat, and add cumin seeds. Sauté until they crackle.
- Add finely chopped onions and cook until they turn golden brown.
- Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
- Add the pureed tomatoes and cook until the oil separates from the mixture, about 5-7 minutes.
- Sprinkle in coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well.
- Add the diced bell peppers and tofu cubes to the pan. Gently fold to coat the tofu and vegetables with the spices.
- Cover and cook for 10 minutes, stirring occasionally, until the bell peppers are tender.
- Remove from heat and stir in fresh lemon juice.
- Garnish with fresh cilantro before serving.
