Vegan Kachori

Vegan Kachori is a delightful Indian snack filled with spiced lentils and peas, deep-fried to golden perfection. It is crispy on the outside and bursting with flavor on the inside, making it a perfect lunch dish.

Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (adjust as needed)
  • Oil - 2 tablespoons (for dough) + oil for frying
  • Yellow split peas (chana dal) - 1/2 cup
  • Green peas - 1/2 cup (fresh or frozen)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - 1 teaspoon
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine whole wheat flour and 2 tablespoons of oil. Gradually add water until a soft dough forms. Cover with a damp cloth and let it rest for 20 minutes.
  2. Meanwhile, rinse the yellow split peas and soak them in water for 15 minutes. Drain and transfer to a saucepan with fresh water. Cook until soft, about 15-20 minutes. Drain and let cool.
  3. In a pan, heat a little oil and add cumin seeds. Once they crackle, add the cooked yellow split peas and green peas. Stir in coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes.
  4. Remove from heat and mix in chopped coriander leaves and lemon juice. Allow the filling to cool.
  5. Divide the dough into small balls and roll each ball into a small circle (about 4 inches in diameter). Place a spoonful of the filling in the center and fold the edges over to seal, forming a ball again.
  6. Flatten each filled ball gently. Heat oil in a deep pan for frying. Once the oil is hot, fry the kachoris in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels. Serve hot with mint chutney or tamarind sauce.
