Ingredients

  • Semolina (sooji) - 100 grams
  • Coconut oil - 2 tablespoons
  • Almond milk - 250 ml
  • Brown sugar - 50 grams
  • Cardamom powder - 1/2 teaspoon
  • Chopped almonds - 2 tablespoons
  • Chopped cashews - 2 tablespoons
  • Raisins - 2 tablespoons
  • Saffron strands - a pinch
  • Water - 100 ml

Steps

  1. Heat coconut oil in a pan on medium heat.
  2. Add the semolina and roast it for about 5-7 minutes, stirring continuously until it turns golden brown.
  3. In a separate pot, heat the almond milk and add the brown sugar, stirring until dissolved.
  4. Add the saffron strands to the almond milk mixture and stir well.
  5. Gradually pour the almond milk mixture into the roasted semolina, stirring continuously to avoid lumps.
  6. Add water as needed to achieve a thick, pudding-like consistency.
  7. Stir in cardamom powder, chopped almonds, cashews, and raisins.
  8. Cook for an additional 5-10 minutes, stirring continuously until the halwa thickens and the nuts are well incorporated.
  9. Remove from heat and let it sit for a minute before serving.
