- Semolina (sooji) - 100 grams
- Coconut oil - 2 tablespoons
- Almond milk - 250 ml
- Brown sugar - 50 grams
- Cardamom powder - 1/2 teaspoon
- Chopped almonds - 2 tablespoons
- Chopped cashews - 2 tablespoons
- Raisins - 2 tablespoons
- Saffron strands - a pinch
- Water - 100 ml
Steps
- Heat coconut oil in a pan on medium heat.
- Add the semolina and roast it for about 5-7 minutes, stirring continuously until it turns golden brown.
- In a separate pot, heat the almond milk and add the brown sugar, stirring until dissolved.
- Add the saffron strands to the almond milk mixture and stir well.
- Gradually pour the almond milk mixture into the roasted semolina, stirring continuously to avoid lumps.
- Add water as needed to achieve a thick, pudding-like consistency.
- Stir in cardamom powder, chopped almonds, cashews, and raisins.
- Cook for an additional 5-10 minutes, stirring continuously until the halwa thickens and the nuts are well incorporated.
- Remove from heat and let it sit for a minute before serving.
