Ingredients

  • Cauliflower - 300 grams, chopped into florets
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - 1 teaspoon (adjust to taste)
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Fresh cilantro - a handful, chopped for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cumin seeds and mustard seeds, letting them sizzle for about 30 seconds.
  3. Stir in the chopped onion, and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
  5. Stir in the chopped tomato and cook until it softens, about 3 minutes.
  6. Add the turmeric, coriander powder, garam masala, red chili powder, and salt, mixing well.
  7. Add the cauliflower florets, stirring to coat them with the spice mixture.
  8. Pour in a splash of water (about 50 ml) to help steam the cauliflower, cover, and cook for 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  9. Once cooked, remove from heat and stir in lemon juice and fresh cilantro.
  10. Serve hot with rice or flatbread.
