Ingredients

  • Red lentils - 100 grams
  • Spinach - 100 grams, chopped
  • Tomato - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Water - 500 ml
  • Fresh cilantro - for garnish

Steps

  1. Rinse the red lentils under cold water until the water runs clear. Drain and set aside.
  2. In a pot, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.
  3. Add the chopped onion, garlic, and ginger to the pot. Sauté until the onions become translucent, about 5 minutes.
  4. Stir in the diced tomato, turmeric powder, coriander powder, and salt. Cook for another 5-7 minutes until the tomatoes soften.
  5. Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, add the chopped spinach and garam masala. Stir well and cook for an additional 5 minutes.
  7. Adjust the seasoning if necessary. Remove from heat and garnish with fresh cilantro before serving.
