- Red lentils - 100 grams
- Spinach - 100 grams, chopped
- Tomato - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Water - 500 ml
- Fresh cilantro - for garnish
Steps
- Rinse the red lentils under cold water until the water runs clear. Drain and set aside.
- In a pot, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.
- Add the chopped onion, garlic, and ginger to the pot. Sauté until the onions become translucent, about 5 minutes.
- Stir in the diced tomato, turmeric powder, coriander powder, and salt. Cook for another 5-7 minutes until the tomatoes soften.
- Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the lentils are tender.
- Once the lentils are cooked, add the chopped spinach and garam masala. Stir well and cook for an additional 5 minutes.
- Adjust the seasoning if necessary. Remove from heat and garnish with fresh cilantro before serving.
