- Jaggery - 50 grams, grated (or maple syrup for a lighter option)
- Cardamom powder - 1/2 teaspoon
- Cashews - 30 grams, chopped
- Raisins - 20 grams
- Cinnamon powder - 1/4 teaspoon
- Salt - a pinch
- Vanilla extract - 1/2 teaspoon
Steps
- Heat the coconut oil in a non-stick pan over medium heat.
- Add the grated carrots to the pan and sauté for about 5-7 minutes, stirring occasionally until they soften.
- Pour in the almond milk and bring to a gentle simmer.
- Add the grated jaggery (or maple syrup), cardamom powder, cinnamon powder, and a pinch of salt. Stir well to combine.
- Continue to cook on low heat, stirring frequently, until the mixture thickens and the carrots are well cooked, approximately 25-30 minutes.
- Once thickened, add the chopped cashews and raisins, stirring them into the halwa.
- Remove from heat and stir in the vanilla extract before serving.
