Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Vegan fish fillets (e.g., tofu or tempeh marinated with seaweed) - 200 grams
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon
  • Oil - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
  2. Heat oil in a large pan over medium heat. Add cumin and mustard seeds, and let them splutter.
  3. Add sliced onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes.
  4. Stir in turmeric powder, coriander powder, and salt. Mix well and add the marinated vegan fish fillets, cooking for about 5 minutes until they are heated through.
  5. Add the drained basmati rice to the pan and gently mix to combine with the spices and vegan fish.
  6. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
  7. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  8. Drizzle lemon juice over the pulao and garnish with fresh coriander leaves before serving.
