- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
- Oil - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
- Heat oil in a large pan over medium heat. Add cumin and mustard seeds, and let them splutter.
- Add sliced onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes.
- Stir in turmeric powder, coriander powder, and salt. Mix well and add the marinated vegan fish fillets, cooking for about 5 minutes until they are heated through.
- Add the drained basmati rice to the pan and gently mix to combine with the spices and vegan fish.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
- Drizzle lemon juice over the pulao and garnish with fresh coriander leaves before serving.
