  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat parathas - 2
  • Onion - 1 medium, thinly sliced
  • Cucumber - 1 small, julienned
  • Fresh cilantro - a handful, chopped
  • Vegan mayonnaise - 2 tablespoons
  • Green chutney - 2 tablespoons

Steps

  1. In a bowl, mix the turmeric powder, red chili powder, garam masala, lemon juice, salt, and olive oil to create a marinade.
  2. Add the vegan fish fillets to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
  3. While the fish is marinating, prepare the parathas according to package instructions.
  4. Heat a grill pan over medium heat, and cook the marinated vegan fish fillets for about 4-5 minutes on each side, until golden and cooked through.
  5. Once cooked, remove the fish from the grill and slice them into strips.
  6. To assemble the Kathi rolls, spread vegan mayonnaise and green chutney on each paratha.
  7. Place the grilled fish strips on the paratha, followed by sliced onions, cucumber, and chopped cilantro.
  8. Roll the paratha tightly around the filling, and serve immediately.
