Vegan Dhokla

- Chickpea flour (besan) - 1 cup
- Water - 1 cup
- Lemon juice - 1 tablespoon
- Ginger paste - 1 teaspoon
- Green chili (finely chopped) - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Salt - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Curry leaves - 8-10 leaves
- Cilantro (chopped) - 2 tablespoons
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine chickpea flour, water, lemon juice, ginger paste, green chili, turmeric powder, baking soda, and salt. Mix well until you have a smooth batter.
- Let the batter rest for about 15-20 minutes to ferment slightly.
- Prepare a steamer by bringing water to a boil. Grease a shallow pan or plate that fits inside the steamer.
- Pour the batter into the greased pan and spread it evenly. Place the pan in the steamer and cover it with a lid.
- Steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the dhokla is steaming, heat oil in a small pan over medium heat. Add mustard seeds and let them crackle, then add sesame seeds and curry leaves. Sauté for a minute.
- Once the dhokla is done, remove it from the steamer and let it cool slightly. Pour the tempering mixture over the dhokla evenly.
- Cut into squares, garnish with chopped cilantro, and serve warm.
