Ingredients

  • Chickpea flour (besan) - 1 cup
  • Water - 1 cup
  • Lemon juice - 1 tablespoon
  • Ginger paste - 1 teaspoon
  • Green chili (finely chopped) - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Curry leaves - 8-10 leaves
  • Cilantro (chopped) - 2 tablespoons
  • Oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine chickpea flour, water, lemon juice, ginger paste, green chili, turmeric powder, baking soda, and salt. Mix well until you have a smooth batter.
  2. Let the batter rest for about 15-20 minutes to ferment slightly.
  3. Prepare a steamer by bringing water to a boil. Grease a shallow pan or plate that fits inside the steamer.
  4. Pour the batter into the greased pan and spread it evenly. Place the pan in the steamer and cover it with a lid.
  5. Steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the dhokla is steaming, heat oil in a small pan over medium heat. Add mustard seeds and let them crackle, then add sesame seeds and curry leaves. Sauté for a minute.
  7. Once the dhokla is done, remove it from the steamer and let it cool slightly. Pour the tempering mixture over the dhokla evenly.
  8. Cut into squares, garnish with chopped cilantro, and serve warm.
