- Urad dal (split black gram) - 1 cup
- Water - 4 cups (for soaking and blending)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Oil - for frying (about 1 cup)
- Vegan yogurt (coconut or almond-based) - 1 cup
- Tamarind chutney - 2 tablespoons
- Chaat masala - 1 teaspoon
- Fresh coriander leaves - for garnish (1 tablespoon, chopped)
- Green chili - 1, finely chopped (optional)
Steps
- Soak the urad dal in enough water for at least 4 hours or overnight.
- Drain the soaked urad dal and blend it with 1/2 cup of water until you get a smooth, thick batter.
- Add salt, black pepper, and cumin powder to the batter and mix well.
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the oil, frying until golden brown and crispy on all sides (about 3-4 minutes per batch).
- Remove the fried vadas and place them on paper towels to absorb excess oil.
- In a bowl, soak the fried vadas in warm water for about 10 minutes to soften them.
- Gently squeeze out the excess water from each vada and arrange them on a serving platter.
- Top the vadas with vegan yogurt, tamarind chutney, and sprinkle chaat masala over them.
- Garnish with chopped coriander leaves and serve immediately.
