Ingredients
- Yellow split lentils (moong dal) - 100 grams
- Water - 600 ml
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Green chili (chopped) - 1 small
- Salt - to taste
- Oil - 1 tablespoon
- Fresh coriander (chopped) - 2 tablespoons
- Whole wheat flour - 150 grams
- Semolina - 50 grams
- Baking powder - 1/2 teaspoon
- Salt (for baati) - 1/2 teaspoon
- Water (for dough) - as needed
- Vegan butter - 1 tablespoon (optional, for serving)
Steps
- Rinse the yellow split lentils under cold water until the water runs clear.
- In a medium pot, combine the rinsed lentils, 600 ml of water, turmeric powder, cumin seeds, ginger, garlic, green chili, and salt. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the lentils are soft and cooked through.
- While the lentils are cooking, prepare the baati. In a bowl, mix the whole wheat flour, semolina, baking powder, and salt.
- Gradually add water to the flour mixture to form a stiff dough. Knead for 5-7 minutes until smooth, then cover and let it rest for 15 minutes.
- Preheat the oven to 200°C (400°F).
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Place the baati balls on a baking tray and bake for 20-25 minutes, turning halfway, until they are golden brown and firm.
- Once the lentils are cooked, use a hand blender to blend them to your desired consistency.
- Adjust seasoning and stir in chopped coriander before serving.
- Serve the daal hot with the baati, and if desired, top with a dollop of vegan butter.
