Ingredients

  • Yellow split lentils (moong dal) - 100 grams
  • Water - 600 ml
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Green chili (chopped) - 1 small
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander (chopped) - 2 tablespoons
  • Whole wheat flour - 150 grams
  • Semolina - 50 grams
  • Baking powder - 1/2 teaspoon
  • Salt (for baati) - 1/2 teaspoon
  • Water (for dough) - as needed
  • Vegan butter - 1 tablespoon (optional, for serving)

Steps

  1. Rinse the yellow split lentils under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed lentils, 600 ml of water, turmeric powder, cumin seeds, ginger, garlic, green chili, and salt. Bring to a boil.
  3. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the lentils are soft and cooked through.
  4. While the lentils are cooking, prepare the baati. In a bowl, mix the whole wheat flour, semolina, baking powder, and salt.
  5. Gradually add water to the flour mixture to form a stiff dough. Knead for 5-7 minutes until smooth, then cover and let it rest for 15 minutes.
  6. Preheat the oven to 200°C (400°F).
  7. Divide the dough into 4 equal portions and roll each portion into a ball.
  8. Place the baati balls on a baking tray and bake for 20-25 minutes, turning halfway, until they are golden brown and firm.
  9. Once the lentils are cooked, use a hand blender to blend them to your desired consistency.
  10. Adjust seasoning and stir in chopped coriander before serving.
  11. Serve the daal hot with the baati, and if desired, top with a dollop of vegan butter.
