  • Coconut milk - 200 ml
  • Turmeric powder - 1 teaspoon

  • Lemon juice - 1 tablespoon

Steps

  1. In a pan, heat coconut oil over medium heat and add the chopped onions. Sauté until they become translucent.
  2. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  3. Stir in the pureed tomato and cook for about 5 minutes until the oil begins to separate from the mixture.
  4. Add the chopped king oyster mushrooms and cook for another 5 minutes, allowing them to soften.
  5. Sprinkle in the turmeric, red chili powder, coriander powder, and salt. Stir well to coat the mushrooms with spices.
  6. Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for an additional 10 minutes until the sauce thickens.
  7. Finish with garam masala and lemon juice, mixing well. Cook for another minute.
  8. Garnish with fresh cilantro before serving.
