Ingredients

  • Chickpeas (canned or cooked) - 400 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - ½ teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Cilantro (fresh) - for garnish
  • Oil (preferably olive or coconut) - 2 tablespoons
  • Water - 200 ml

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
  4. Add the chopped tomato and cook until it softens and the oil starts to separate.
  5. Stir in the coriander powder, cumin powder, turmeric powder, and salt. Cook for another 2 minutes.
  6. Add the chickpeas along with their liquid (if using canned) and water. Stir well to combine.
  7. Bring to a simmer and cook for 10-15 minutes, allowing the flavors to meld. If it gets too thick, add a little more water.
  8. Finish with garam masala and cook for an additional 2 minutes.
  9. Garnish with fresh cilantro and serve hot with rice or flatbreads.
