- Chickpeas (canned or cooked) - 400 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Cilantro (fresh) - for garnish
- Oil (preferably olive or coconut) - 2 tablespoons
- Water - 200 ml
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add the chopped tomato and cook until it softens and the oil starts to separate.
- Stir in the coriander powder, cumin powder, turmeric powder, and salt. Cook for another 2 minutes.
- Add the chickpeas along with their liquid (if using canned) and water. Stir well to combine.
- Bring to a simmer and cook for 10-15 minutes, allowing the flavors to meld. If it gets too thick, add a little more water.
- Finish with garam masala and cook for an additional 2 minutes.
- Garnish with fresh cilantro and serve hot with rice or flatbreads.
