- Ginger - 1 inch piece, grated
- Green chili - 1, slit (optional for heat)
- Cumin seeds - 1 teaspoon
- Coriander powder - 2 teaspoons
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Oil (cooking or coconut oil) - 2 tablespoons
- Fresh cilantro - for garnish
- Water - 1 cup
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they are golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add the pureed tomato and cook until the oil separates from the mixture, about 5-7 minutes.
- Mix in coriander powder, cumin powder, turmeric powder, and salt. Cook for another minute.
- Add the chickpeas and water, stirring well. Bring to a gentle simmer.
- Let it cook for 10-15 minutes, allowing the flavors to meld. Stir occasionally.
- Add garam masala and mix well, cooking for an additional 2-3 minutes.
- Garnish with fresh cilantro before serving.
