Ingredients

  • Flattened rice (poha) - 100 grams
  • Peanut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Dried red chilies - 2, broken
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Curry leaves - 10, fresh
  • Roasted peanuts - 50 grams
  • Chana dal - 30 grams
  • Cashews - 30 grams
  • Coconut flakes - 2 tablespoons (optional)
  • Lemon juice - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Dry roast the flattened rice (poha) in a pan over low heat for about 5 minutes until it becomes crisp. Set aside.
  2. In the same pan, heat the peanut oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  3. Add broken dried red chilies and curry leaves, sautéing for about 30 seconds until fragrant.
  4. Stir in the turmeric powder and salt, mixing well for another 30 seconds.
  5. Add the roasted peanuts, chana dal, and cashews, cooking for another 2-3 minutes until slightly golden.
  6. Remove the pan from heat and mix in the roasted flattened rice, ensuring all ingredients are well combined.
  7. Drizzle lemon juice over the mixture and toss gently.
  8. Garnish with fresh coriander and coconut flakes if using, then serve warm or at room temperature.
