- Flattened rice (poha) - 100 grams

- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Dried red chilies - 2, broken
- Turmeric powder - 1/2 teaspoon

- Curry leaves - 10, fresh
- Roasted peanuts - 50 grams
- Chana dal - 30 grams
- Cashews - 30 grams
- Coconut flakes - 2 tablespoons (optional)
- Lemon juice - 1 tablespoon
- Fresh coriander - for garnish
Steps
- Dry roast the flattened rice (poha) in a pan over low heat for about 5 minutes until it becomes crisp. Set aside.
- In the same pan, heat the peanut oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add broken dried red chilies and curry leaves, sautéing for about 30 seconds until fragrant.
- Stir in the turmeric powder and salt, mixing well for another 30 seconds.
- Add the roasted peanuts, chana dal, and cashews, cooking for another 2-3 minutes until slightly golden.
- Remove the pan from heat and mix in the roasted flattened rice, ensuring all ingredients are well combined.
- Drizzle lemon juice over the mixture and toss gently.
- Garnish with fresh coriander and coconut flakes if using, then serve warm or at room temperature.
