- Green jackfruit - 400 grams (canned in water, drained and rinsed)
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Chopped onion - 1 medium (about 150 grams)
- Chopped tomatoes - 1 medium (about 100 grams)
- Garlic - 4 cloves, minced
- Ginger - 1-inch piece, minced
- Green chilies - 2, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Coconut milk - 200 ml
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Drain and rinse the canned jackfruit, then cut it into small pieces resembling prawns. Set aside.
- In a large pan, heat coconut oil over medium heat and add mustard seeds and cumin seeds. Allow them to splutter.
- Add the chopped onion to the pan and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic, ginger, and green chilies. Cook for an additional 2-3 minutes until fragrant.
- Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften, about 5 minutes.
- Incorporate the jackfruit pieces into the pan and mix well with the spice mixture, cooking for 5 minutes.
- Pour in the coconut milk and bring to a simmer. Reduce the heat and let it cook for another 10 minutes, allowing the flavors to meld.
- Sprinkle garam masala over the dish and stir gently. Cook for an additional 2 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
