- Jackfruit (young, canned) - 400 grams
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, minced
- Green chili - 1, slit
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Fennel seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Drain and rinse the canned young jackfruit. Cut it into small pieces and set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, fennel seeds, and curry leaves. Sauté for a minute until fragrant.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic, ginger, and slit green chili. Cook for another 2 minutes.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.
- Add the jackfruit pieces to the pan and mix until they are coated with the spices. Cook for 5 minutes.
- Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for another 10-12 minutes, allowing the flavors to meld.
- Add garam masala and stir well. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
