  • Tomato - 1 medium (chopped)
  • Green chili - 1 (slit)
  • Ginger - 1 inch (grated)
  • Garlic - 2 cloves (minced)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable broth or water - 2 cups
  • Oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. Heat oil in a medium-sized pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in the minced garlic, grated ginger, and green chili. Cook for another 1-2 minutes until fragrant.
  5. Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Add the drained chickpeas and sauté for 2-3 minutes, allowing the spices to coat them well.
  7. Drain and add the soaked rice to the pot, stirring gently to combine everything.
  8. Pour in the vegetable broth or water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  9. Turn off the heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh cilantro and serve hot.
