Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- Heat oil in a medium-sized pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and green chili. Cook for another 1-2 minutes until fragrant.
- Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- Add the drained chickpeas and sauté for 2-3 minutes, allowing the spices to coat them well.
- Drain and add the soaked rice to the pot, stirring gently to combine everything.
- Pour in the vegetable broth or water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Turn off the heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve hot.
