- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Wash the okra thoroughly and pat dry. Cut off the tops and tails and slice them into 1-inch pieces.
- Heat the oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn translucent and slightly golden.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add the chopped tomatoes and cook until they soften and start to break down.
- Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
- Add the sliced okra to the pan, stirring gently to coat them in the spice mixture.
- Cover the pan and cook for about 10-12 minutes, stirring occasionally, until the okra is tender but not mushy.
- Once the okra is cooked, sprinkle garam masala over the top and mix gently.
- Garnish with fresh cilantro before serving. Enjoy with rice or flatbreads.
