Ingredients

  • Okra - 250 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Wash the okra thoroughly and pat dry. Cut off the tops and tails and slice them into 1-inch pieces.
  2. Heat the oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until they turn translucent and slightly golden.
  4. Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
  5. Add the chopped tomatoes and cook until they soften and start to break down.
  6. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
  7. Add the sliced okra to the pan, stirring gently to coat them in the spice mixture.
  8. Cover the pan and cook for about 10-12 minutes, stirring occasionally, until the okra is tender but not mushy.
  9. Once the okra is cooked, sprinkle garam masala over the top and mix gently.
  10. Garnish with fresh cilantro before serving. Enjoy with rice or flatbreads.
