  • Okra - 250 grams

  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Wash the okra thoroughly and pat dry. Cut off the tops and tails, then slice the okra into 1-inch pieces.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the chopped tomatoes and cook until softened, about 3-4 minutes.
  6. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well to combine.
  7. Introduce the sliced okra to the pan, stirring gently to coat with the spices.
  8. Cover the pan and cook for about 10-15 minutes, stirring occasionally, until the okra is tender but not mushy.
  9. Once cooked, garnish with fresh cilantro and serve hot.
