- Okra - 250 grams

- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Wash the okra thoroughly and pat dry. Cut off the tops and tails, then slice the okra into 1-inch pieces.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the chopped tomatoes and cook until softened, about 3-4 minutes.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well to combine.
- Introduce the sliced okra to the pan, stirring gently to coat with the spices.
- Cover the pan and cook for about 10-15 minutes, stirring occasionally, until the okra is tender but not mushy.
- Once cooked, garnish with fresh cilantro and serve hot.
